Hospital contest offers challenging new recipes

Murray-Calloway County Hospital has a new challenge for any Murray State employee to participate in.

Each week a new recipe will be posted on both the MCCH Center for Health and Wellness Facebook page or the recipes can be sent directly to any Murray State email.

The duration of the challenge is now through July of this year. Winners will be announced in August.

Last week any participants were expected to make a crispy salmon with avocado and grapefruit salad dish. Dishes already in the challenge posted online for anyone to try include black-eyed peas with pork and beans, skillet gnocchi with chard and white beans, heart kale salad and slow-cooker vegetarian lasagna.

Everyone participating will receive the chance to win five free 30-minute personal training sessions or a 30-minute massage. The more often you participate, the better the chance of winning.

To partake in the challenge any participants must follow three simple steps. First, the recipe has to be chosen and prepared. The recipes that are posted online can be prepared in any order.

Then there has to be a picture taken and loaded up to the Facebook page. Then you must comment and tell MCCH what you thought about the food. They want to know answers such as “Was it good?” and “Did it challenge you to try something new?” and “Will you try it again?”

When posting the picture to their Facebook page you must identify yourself with Murray State.

The picture and the review will your ticket to be entered for a chance to win any of the grand prices.

The recipes that have been chosen are selected with the sole purpose of challenging participants to try new or different ingredients and to think about using some more familiar ingredients in a new and healthy way.
